Cream went up 4.2% - and that cost 118 € a month

A 4.2% rise in the price of cream looked small and was lost among forty invoice lines. RestoAudit noticed the new price held for the fifth delivery and counted the effect: 118 € a month in purchasing and 21.40 € per dish. The buyer asked for a second quote and the price went back to 3.14 € a litre.

What next: Food cost control is on - they watch food cost by dish, not by venue.

A price rise on one line went unnoticed: in percent it looked small, and in the invoice it was lost among forty rows. At a volume of about 900 litres a month it produced half of the food cost increase on the two best-selling dishes.
